Tom, I have made all kinds of sauce for friends and haven't killed any of them yet. I do recommend that they refrigerate but I know some of them don't bother. Ratios are as follow:3 parts chile of choice, chopped. 1 part white vinegar, 1/2 part water( or lemon sauce) 1/10 part garlic, 1/10-1/20 salt. Bring to simmer for 15 minutes, leave sit for a couple of hours, strain seeds and skin out (or leave in) and bottle. Works every time. Buzz Sycamore,IL
