As we had turkey coming outta our ears, I thought, Well, why not something different? So, here ittiz, as Bluey, would say!! :-) (sorry, Green, couldnt resist!) 2 cups of chopped up, leftover turkey(use chicken if no turkey) 4 slices of deli pepper ham, chopped up 1 hab, chopped fine 1 jal, chopped fine..(both seeded) 1 large garlic, chopped fine 1 one inch knob of fresh ginger, chopped fine 1 onion, chopped into shreds 1 tbls Madras curry powder 1 cup of coconut milk 1 1lb block of tofu, drained of water and cut into 1 inch blocks sesame oil to taste....cornstarch and water to thicken, Calvin's or Jim's hab powder, if not hot enuff Put about one tbls peanut oil in a wok....get this hot, and add the peppers, garlic, ginger & onion...turn heat down, and simmer for about 5 minutes, covered....sprinkle the curry powder on and let this cook for about another two to three minutes, add the coconut milk, and when it is hot, add the tofu, and stir in the turkey, continue to heat this mess through, thicken if needed, add hot chicken stock if needed, sprinkle with sesame oil, and serve, with Thai rice.....sheer heaven, after a big turkey dinner couple of nights earlier! Something different happened to us this year....expecting our daughter, and hubbie, and two teen age grandchildren, one of each flavor...and the oven quit...would not get above 250F !! So, at three o'clock here is the old man, moving stoves around, so the turkey could continue cooking....good thing we had a couple of empty suites with good stoves so I could move one into our place! Never ever have had taht happen before, and hope, never again...Chees, Doug in BC
