Well, here is what I do,found it in an old Mexican cook book, years ago,
and have been doing it this way for about 30 years.
2	medium tomatos. skinned and chopped roughly
1	medium onion. chopped
1	garlic clove, chopped fine
2	jals seeded and chopped
1	tbls chopped cilantro
4	eggs
8	corn tortillas,warmed

In a skillet,saute the onion and garlic in a little oil, until onion is
transparent, add the chopped tomato and the jalapeno peppers, and let
this simmer until the salsa has evaporated somewhat, then break the eggs
into the salsa, right on top of it, cover and let cook on low until the
eggs are set to your liking...salt and freshly ground black pepper to
taste, and Caramba....Eggs Ranchero, or Mexican ranch style eggs...serve
on the warmed tortillas, one under each egg and salsa, and garnished
with the chopped cilantro, and the other four to eat with them.
Sometimes the other four get a little old cheddar melted on top of the
tortilla, and served that way, with the eggs...yum yum! Cheers, Doug in BC
