Yesterday was a very frustrating day...sometime in the previous 48 hours, someone had broken into our storage room in our apartment, and had stolen all our wine, plus numerous bags of groceries. We have never before been robbed, and it is a very bad experience. So, yesterday, I got a couple of chicken breasts, some rice, and here it is...comfort food! 2 boneless, skinless chicken breasts 1 cup rice(I use Thai for everything) 3 cups chicken stock, make yer own, tastes better 1 tomato, skinned and choppped(baseball sized) 1 red, ripe jalapeno 1 green jalapeno 1/2 red onion 10 sprigs of cilantro 1/2 tsp cumin salt and fresh black pepper Get the chicken stock simmering, cut the two breasts into 8 pieces, and put in the pot with the stock...add salt and pepper to taste, and a clove of garlic chopped fine, return to boil and let simmer until chicken is starting to get tender. Add the rice to simmering broth and chicken, bring back to boil, turn down to simmer and cover for twenty minutes. While this is cooking, in a little oil fry the onion, chopped tomato and the chopped seeded jalapenos, with a little salt and freshly ground pepper, and when this has reduced somewhat add the chopped cilantro and the cumin. When the rice is done, add this veggie mixture to the chicken and rice, and stir it all in...let this sit and meld(combine) for a few minutes and serve, with avocado shrimp salad....tastes wonderful. If it is not hot enuf, add a little Calvin's to taste. Cheers, Doug in BC Note...I was fortunate in getting a few red, ripe jalapenos....they sure taste different than green ones!
