Hello! I just subscribed to this list and wanted to say hi to everyone! My wife Deborah and I are both spice addicts (we love Mexican food) and we are hoping to pick up some useful tidbits as well as share some of our own spicey experiences.. ;) I do have a question: I am attempting to put together a home-made Jalapeno based sauce and was wondering if anybody had any suggestions. I saw a few references to some sauces aging in the basement. Are there any links available to these types of recipes?? ;) This being my first attempt, I am unfamiliar with the mechanics of sauce-making. I am assuming that you cook (boil) it before bottling. I am using a juicer to extract the jalapeno portion as well as some carrot juice.. should I puree them in a blender instead?? Any help would be much appreciated... Derek Kaye
