Mark, A "finishing sauce" is a sauce (hot or not) that is usually sweet or has a good bit or sugar in it. You would put it on after the item has finished cooking or just before it is finished and heat it up a little. The reason for this is that the sugar will burn at BBQ or Grilling temperatures, leaving a black looking crust and burnt taste on the meat.
