Two other ways to use HUGE zucchini.  One I've posted on another list, but would be happy to post again
here if there is interest (e-mail me privately if you want the recipe, if there are several requests,
I'll post).  The first is for zucchini glazed fruit.  There is no way to tell the "fruit" is zucchini,
and we've successfully used the fruit in cakes, breads, cookies, loaves, etc.  It's similar to citrus
peel.  The second way is to save the zucchini till Halloween and carve a jack-o-lantern out of it.  It
makes for a good conversation piece and an unusual shape to carve.  You have to cut it in half, to be
able to scoop (the best way would be to cut lengthwise) out the guts.  It looks great standing in the
corner of a porch.
