[gardeners] Requesting advice re: beans

Hello all.  I am planning on growing some beans this year - I believe
the correct terminology is "shell beans" - you know, the ones that are
dried and stored in glass mayonnaise jars on the kitchen counter and
then you make soup with them.

So...some questions that I hope some of you can help me with...

Is "shell beans" the correct term for these beans?
Can you suggest some that have been successful for you?
Can you tell me just how to go about growing, ripening, drying these
beans?

I am a fairly intermediate gardener, live in the western North Carolina
foothills - zone 7a.
