We're on our second generation Brinkman smoker, and I might add they are the 
best.  They are constructed w/metal legs that don't conduct the heat.  No 
problem on decks.  Ours is on a redwood deck connected to the house.   They 
usually come w/a metal drip pan underneath as well.  They are the greatest!  
We often smoke various meats, seafood and veggies.  Soaked woods such as 
Pecan or Cherry wood chips for chicken or seafood are delightful.  Onions are 
wonderful smoked as are chiles!

Good luck---there are several real good books out on smokin' w/rubs and 
marinades.
