Seana, the person to ask about pickling recipes is really 
Allen Mertin -- I believe that he (and perhaps Judy) is just as
devoted to pickles as I am, and that's saying something!  If
Allen has time in between doing the extraordinary planting 
which he is in the middle of, perhaps he will publish some
pointers here......  

I'll ask my friend down in Delaware to send us her favorite
bread-and-butter pickle recipe, for you. 

I make home-made raspberry jam, but I don't actually make
pickles. I just eat 'em...  every day at 5:00pm.  It's a ritual
sparked by a driving passion for something vinegary that
overwhelms me at that hour..  

Aaah, but yes, I do make one kind which I love:  it is an
Indian-style side dish served as an accompaniment to
curry.  Actually, I also have haf a dozen more Indian pickle
recipes, for those who enjoy hot peppers.....

Khira Raita  (cucumber with yogurt):

2 long  green cucumbers
2 tsp salt
1 small clove garlic, crushed
1/2 tsp finely grated FRESH ginger
1 cup of yogurt
lemon juice to taste

Peel and slice cucumbers thinly, sprinkle with salt, chill for
1 hour. Pour off the liquid well.  Mix garlic and ginger into the
yogurt, then stir in the cucumbers thoroughly. Taste and add
a bit more salt if needed, and add a few drops of lemon juice
if desired. Serve chilled.

You may add a big tablespoon of sour cream, if desired, to
enrich the dish.
