Aaah, but yes, I do make one kind which I love: it is an Indian-style side dish served as an accompaniment to curry. Actually, I also have haf a dozen more Indian pickle recipes, for those who enjoy hot peppers..... Khira Raita (cucumber with yogurt): 2 long green cucumbers 2 tsp salt 1 small clove garlic, crushed 1/2 tsp finely grated FRESH ginger 1 cup of yogurt lemon juice to taste Peel and slice cucumbers thinly, sprinkle with salt, chill for 1 hour. Pour off the liquid well. Mix garlic and ginger into the yogurt, then stir in the cucumbers thoroughly. Taste and add a bit more salt if needed, and add a few drops of lemon juice if desired. Serve chilled. You may add a big tablespoon of sour cream, if desired, to enrich the dish.
