Have transplanted the following deeper with excellent results
Tomatoes, Caul, Sprouts, cabbage, lettuce and Brocc. 
Peppers did not seem to start new roots above the original potting 
soil line.

Ref transplanting seedlings deeper, I think that only works with some
veggies.
I know from experience that it works with tomatoes (and it's a frequent tip
in
garden guides.) Some types of plants would probably be harmed by having too
much of their stems buried.
