Hi Justine, The time to ripening can be perplexing. The amount of sunlight, whether there is shelter from prevailing winds and even the amount of water and fertilizer the individual plants get are all factors. Plants grown on a South facing slope often ripen earlier than others. There is also the vitality of each individual plant to consider.
