Hi Pam,
Don't take my green shoulder advice as being set in stone. Remember that
the heirlooms are primarily separate land races and they may have
considerable diversity within individual varieties. If the tomato is
obviously soft, try it before it gets rotten. If you are too soon, wait a
little longer on the next. Just use your own good judgement.
