A few weeks ago I tried out a new (for me) place in Seattle called Bick's Broadview Grill. Great place! Anyway, had the grilled salmon steak (spices unidentified) served over a mound of horseradish-garlic mashed potatoes (the real kind with lumps of potato still in) all surrounded by some kind of yuppiesh/foo-foo/chopped veggie/almost salsa/vinagretty stuff. The veg thing was the only thing with discernable heat - the combination was wonderful! So, Rael, use that salmon! Of course, we're partial to the King of Fishies here in Seattle!
