In the many, many years I have been experimenting with various forms of
cooking I have had occasion to use many types of oils.
The oil with the very least self-flavor, is grape-seed oil, which the
French have used for many years but is a recent addition to our
arsenal of cooking oils.
It has almost the highest smoking temperature of any oil. The only one
with a higher smoking temp is Avocado oil which in itself is great for
cooking almost anything and is lovely for infusing pepper and other herb
flavors.
I use both of the oils for infusing my home-grown herbs. They are more
costly than other oils if you buy the retail, but I have been able to
find them from time to time at Trader Joes markets and even at Price
Costco.
They are worth the effort of shopping for them. The Avocado oil has a
buttery texture that is wonderful when you want to sauté mushroom in
chili oil or medallions of beef or whatever.
do try them I don't think you will be disappointed.
