A while ago, just to see if they really work, I bought a bag of those zip-lock "vegetable bags" (the ones with little tiny hardly-visible holes all over them). And I found they _really do_ work. The fresh chiles I put into the fridge in those bags side-by-side with various other typical storage conditions (just chance, though, not a purposeful experiment) ended up lasting in perfect condition significantly longer than the other chiles, like maybe double. I don't now remember exactly how long they did last, but as I recall they were still in _perfect_ condition something like 6 or 8 weeks later, long past when the others had passed behond the usable stage, must less perfection -- details are really vague now, sorry, I just remember the conclusion. So, I'd say this way of storing fresh chiles in the fridge may well yield the longest lifespan. But I'm still using that original box, at the rate of 1 or 2 bags per year, due to environmental guilt. :-( --- Brent
