I browsed through Chip's (Peppers in Dewey Beach, DE)catalog and found a pepper horseradish sauce. He recommends using it on seafood. It lists apricots, peaches, apple cider vinegar, lemon juice and horseradish. No peppers listed so I guess add in whatever floats your boat. There is also "Spicy Chesapeake Seafood Hot Sauce" with dijon mustard seed, white wine vinegar, tabasco peppers, garlic, horseradish, herbs, spices, sugar, salt, lemon juice, tomato paste, red wine and corn syrup. For a few other ideas...my dad used to add freshly ground roots to beets. Seems you could make a sauce with the addition of some balsamic vinegar and maybe a pepper or two. Or on the idea of a spicy mustard, horseradish could be an interesting addition to an Inner Beauty style sauce. Sorry for the lack of quantities - but heck I dont usually pay attention to that part of the recipe anyway. I hope this gives you some interesting ideas, Suz
