In two years of reading on this subject (very important to me due to family health history - no problems myself yet{knock on wood}), I have found both ends of the spectrum on the fat situation. Everybody has research to back them up too. Okay - what's the deal here? All in all, it seems to me also that it comes down to getting rid of the processed food and substituting monounsaturated fats for the saturated. Fresh homemade salsa should be great for us!
