If memory serves (which at my rapidly advancing age it might not), "The Joy of Cooking" has instructions for preparing possum. It even gives you instructions, should you be wishing to do so, on how to skin and prepare a squirrel. Be sure and wear gloves- many wild rodents, etc. carry trichinosis and other human-unfriendly bugs.
