Depending on where you live 'down under' and just how cold your winters are you might try cover them with removable plastic tents. It works in Florida, USA but here we rarely have real cold. This winter not even a light frost on my garden. If you live where it gets serious cold you might transplant to pots and move the pplants indoors. In general my pepppers survive as long as I keep them from freezing. I have managed to start a couple from cuttings when nematodes begin to cause serious problems.
