Coarsely chop a bunch of tomatoes and mix with chopped onion, chopped cilantro leaves, and chopped green serranos or even habanero (though I don't prefer this flavor) or the best of all, toasted orange-ripe Aji Amarillo -- all in proportions of your choice. Add a tsp. or so, to taste, of fresh lime (or lemon) juice if desired (my wife doesn't usually want this added, but I like it). Eat with chips, tacos, burritos, steak, fried eggs, whatever. Does not really keep -- so just make as much as you'll eat right away. --- Brent
