Well, last night Jack Frost and old Man Winter conspired to end my growing season. Jack did a little nibbling last week, but now there will be no recovery. So its time for making "Year End Sauce". It is different each and every year. We collect ALL the Chiles (ripe, green, big, small, etc.) wash, remove stems, chop and put them in large pots. Ad water, vinegar, salt, lemon and or lime juice and some fresh herbs like rosemary, garlic and dill. Simmer the mixture for several hours, taste and adjust flavor with more herbs, juice, wine, honey, fruit or what ever is in the cupboard. Them their big pots bubbling on the stove sure makes the home smell gooood! We smoke dry and dehydrate some, but most go into the pot. So tell everybody what you do after Jack makes his visit to your pepper patch.
