I like to use the Chipotles in Adobo, Herdez being my favorite, as base for a sauce to crock pot spareribs. I also made some 'True Believers' out of non CH folks at last year's Super Bowl soireé with meatballs simmered in the same basic sauce. I don't use a recipe, just add tomato sauce for volume, garlic, salt to taste, sugar, etc. I make the meatballs with garlic, onions and cilantro and bake them in a pan on a rack which gets rid of much of the fat.
