J. B. Cattley wrote a little rant. I often wonder at these examples of ignorance overcoming intelligence; usually I ignore it (as in the English cooking thread), but as this one is aimed at me I'll reply. > I notice that your site deals exclusively with Indian curries; do > you have a reasonable excuse? Pity you didn't bother to have a proper look but then why let facts get in the way of a nice bit of prejudice? There are Thai, Pakistani, South African and Caribbean curries there as well. The recipes mainly come from current or ex CH's and I am very grateful to all who have contributed. They are a very popular part of the site and I am always looking for more recipes from any country. You got one you'd like to share? A rendang recipe would go down well. The Thai recipes are the genuine article too not some nouvelle version. They come from the late Colonel Ian Philpott's site. He kindly gave me permission to include the recipes when I first set up my web site 2 years ago. A charming man and sadly missed. > What do the brits have against the Best Food In The World, anyway? It's simply a matter of history. Hot and spicy food has made it's way into the cuisine of most European countries which once had colonies in areas where hot and spicy is the norm. If you go to the Netherlands (perhaps you should have) you will find lots of Indonesian restaurants and influence. In France it's North African. Here in the UK our history is such that "Indian" (for which read Bangladeshi, Pakistani and Indian) food has been introduced by immigrants and adopted by many more. I hope I've shed a little light in your darkness but somehow I doubt it. ah well, David drop in at The Curry House http://www.curryhouse.co.uk for curry recipes, articles and a UK restaurant guide
