JJ, I can empathize with you - about 3 years ago, I ordered 20 lbs of NM green chiles and had a freezer full of them. It took me awhile to use them all up - I tried one of Garry Howard's chili recipes to help deplete my stock (I wish I had some in the freezer right now!) - his Hotter 'n Hell Chile Verde with chicken and oh my god it really was hotter than hell. I ate it with rice (like I had emailed you earlier about) and sour cream (I don't usually eat chili or chile verde with sour cream, but this time I had to.) and it was barely palatable then and it took forever for me to eat. At least my boyfriend at the time (now husband!) didn't try it because one time when our relationship was still new, I made chicken enchiladas with the green chiles, he took one bite of 'em and said "Are you trying to kill me???" and me, being the sensitive soul that I am immediately burst into tears! It was funny...hey, and can you believe he still married me?? Nisa PS. How about having a glass of milk to drink while eating it? Sometimes that helps me, but not always. Also at Indian restaurants, they often have lassi (yogurt drink) by their side and I think it's supposed to help fight the fire, but I'm not 100% sure about it.
