When I lived on Long Island, somebody gave us a whole side of elk; they
didn't have room to store but one side themselves. We had elk chili,
elk steak, elkburgers, elk potroast, and elk stroganoff...and you're
right, it was fabulous. Like very dark and rich but extremely lean beef,
and it really stands up to heat. Mmmmmm. Those were the same splendid
neighbors who used to bring us watercress from their spring.
