And -> Texas Red chili made with elk is this chile-heads gastronomic dream... x When I lived on Long Island, somebody gave us a whole side of elk; they didn't have room to store but one side themselves. We had elk chili, elk steak, elkburgers, elk potroast, and elk stroganoff...and you're right, it was fabulous. Like very dark and rich but extremely lean beef, and it really stands up to heat.
