Some months back there was a discussion thread about the best way to fill sauce bottles with small openings. Today I saw a really neat one. My friend had bought (at a restaurant supply store that carries used equipment) one of the gadgets that squirts jelly into donuts. (container with a plunger and lever and a tapered tube sticking out the side that one would stab a donut on and applying force to the leve, inject the jelly. My friend adapted it with some clear plastic tubing (he got it at an acquarium store) which is long enough to insert to the bottom of the bottle and as he depresses the plunger with one hand he withdraws the tubing to the top of the bottle. This way there are no air spaces in the bottles (this sauce is fairly thick).
