Just to let you know, Dave and I have been doing a beet-based hot sauce for almost three years. Sells pretty good. If you are considering using beets as a base, here are a couple of suggestions. Use a little sugar and basalmic vinegar to give you a little sweetness to the sauce. Makes a great flavored sauce and the color is fantastic. Use it over cream cheese with crackers or bagels. One of our customers made a cheese log with bleu cheese, cheddar cheese, and cream cheese with our beet sauce in it and rolled it in crushed walnuts. She said the color was bright pink and just hot enough. Good luck!
