Hey there everyone. I have returned from yet another wild adventure in the Rainforest. This one happened to be located in the Scarborough Town Center Mall in Toronto. The opening went great. The new crew were a bit surprised to see what our version of high volume business was all about. We had two hour waits for many guests and the line was so long at one point that it cut across the entrance to another restaurant and into the food court. At first the other restaurant complained, but just a couple of hours later came back to apologize and they told us that they just did their biggest day in history because of our overflow. Anyhow, I was unable to sample any unique cuisine on this trip. I did however obtain some new hotsauces for my dining pleasure. I also purchased some Habaneros in a place referred to as Kensington Market. The Habs were great. I ate a couple straight out of the bag, while the others I worked into some dishes for private consumption only. My memories of Toronto are very wonderful. I worked with some great people. I trained a group of people who in their own right will make their mark on the company. And I come out of it much stronger and ready for the future. Its great to be back and to finally start catching up on my e-mail. Yours in Flavor John "ChefChile" Whalen
