"Has anyone seen the red savina tests?" Michael Bailes asked. I cannot say that I have. Neither can I say I have seen any published results of any capsaicinoid testing other than in the article which describes the first use of HPLC for that type of testing. (Hoffman, Lego and Galetto, J. Agric. Food Chem. 1983 vol 31 1326-1330). Comparison test information might be in the journals in the period right after the anouncement of the method, say between 1985 and 1990. If there were articles, there might be stuff about varietal content and cultural comparison as well as location within the fruit. After this time, the results might be so common and be of a quality assurance nature and not be published any more. I have not checked; it is enough outside my field that I would not be aware of any such studies. One of these days during a vacation, I might dive into the Chem Abstracts - that is when I am not growing chiles or diving into salsas! George Nelson 70431.3065@compuserve.com
