My family would have a bottle of Tabasco in the cabinet, but I never sought it with much interest. But the green sauce in a cheap local restaurant (Talita's) made a bell ring in my head. That first flash of flavor before the heat still pleases me, even after I've pursued many other pepper flavors. I think it's a little bit unfortunate that few people understand how peppers have flavor other than their heat. When I tell someone that I enjoy pepper flavors, I feel like I'm telling them I read Playboy magazine for the articles. Conversely, if I cook something with pepper heat, some people can't taste anything beyond the heat.
