[CH] Cheese sauce

Does anyone out there know of a good chipotle/cheese sauce recipe, for
cheesy eggs. Will probably make one from scratch
4 oz plain flour
1 egg (2 if you fancy a heart attack)
2 oz grated STRONG cheddar
2 floz milk [add until sauce is fluidly smooth- this is a maximum]
chipotle mince to taste.
black pepper to taste too.
To prepare sauce, mix all ingredients, adding the flour SLOWLY. Heat sauce
through, while mixing.
Prepare sauce in a pan, whilst boiling eggs. Peel eggs when boiled [Gee, I
never thought o dat] and slice them in half lengthways. Place eggs flat
side down, in a dish.
Pour cooked sauce over pre-boiled and halved eggs. Grate a little cheese
on top and grill to brown it.
Any further suggestions as to a suitable OOMPH factor, would be appreciated.
