Hydrogenated or partially hydrogenated oils are used to extend the shelf life of foods. They are supposed to be a worse type of fat than non-hydrogenated oils. The easy way to tell the difference is hydrogenated will be more of a solid (stable) at room temperature. Non-hydrogenated will be liquid.
