Mark are you looking for a recipie for the GONZO chillis? I was the creator of these wonders unfortunately I'm not currently producing them. I'm not sure about giving away the secret but here goes I always used seeded chillies. Basically the process involves heating and steeping the chillies in increasing concentrations of sugar syrup over three or four days and then dehydrating them.
