The best recipe I've found for shark is melt some butter with some minced garlic and maybe a shot of your favorite hot sauce, brush the fish with the mixture and grill it over a nice oak fire. It takes a 30-60 minutes to get a good oak fire ready for grilling and just a couple of minutes on each side to cook the fish, but boy is it worth the work and the wait!
