[CH] hot sauce

I'm look for the recipe/process to make hot sauce. I've
created a sauce that has a lot of fire (habs, tabasco's and 
charleston hots).  What is the process use to make
like tabasco sauce.  I keep seeing references to fermenting
and aging.  Can someone point me in the right direction.
