Re Janet's mention of smoking chiles on a Weber grill.
I have one of the big, deep, kettle-type Weber grills - with the coals on one
side and the peppers on the other side they still got a bit scorched and had
to be shifted about so all were equally treated.
Then I had a brainstorm.
I went to a sheet metal shop and had a "chimney" made for the Weber.
It is the exact circumference and the lid fits on it just like on the kettle.
It is 12 inches tall and has a 1" wide flange (shelf) all around the inside
about 1 1/2 " below the top rim
It also has a couple of handles welded on to either side (regular store bought
hardware handles)
The grid rests on the flange and the peppers can cover the entire top.
I use hardwood and after it has burnt down to coals, I throw in a couple of
cups water-soaked chips set the "chimney" in place and clap the lid on. works great.
I also bought a tall "fish smoker" from an ad in the Pennysaver for $20. it
also has a thermometer similar to the Weber.
