Keeping the plants over winter is some trouble, so why bother with
jalapenos, IMO?  You can buy those.  The trouble is worth it for unusual or
special types, e.g. C. pubescens or most C. baccatum cultivars, or even C.
chinense if that's what you prefer (though C. chinense are generally more
fussy about conditions to keep them in production throughout winter, or
even simply alive, than the two species I just mentioned).

No, just let them be.  Just cut back anything too sprawling for your chosen
indoor location, as a matter of practical convenience and to ease the task
of searching for the inevitable periodic aphid/mealybug/thrips/scale
infestations you'll have.

Yes, they would -- but in the meantime you won't be getting the flowers and
fruits you would have if you hadn't cut them back.
