well fellow speaking of limes my fiance' makes some limes that have all the heat that I think that your looking for. yum yum what you do is take some limes and cut them in quarter but not all the way through,. so that they stay together. set them aside for a couple of minutes while you put about two tablespoons of rock salt in the bottom of a half gallon jar. when you have the salt in the bottom place the limes into the jar squish them into the jar so that it is totally filled.when your putting the limes into the jar also place your favorite hot peppers in as well ... the traditional portuguese recipe calls for peri peri but we used habs instead. when the jar is filled with limes and peppers. squeeze in fresh lemon juice into the jar until it is completely full. then put wax paper over the top of the jar and then put the lid on tightly. place jar in full sunshine for three weeks or until the limes turn yellow. ( but my fiance' could not wait that long so she sampled frequently along the way) =) but it is very good. the sunshine here in oregon took 3 month to cook properly. but they are very good and are excellent with meat. hope you have fun with this one it is well worth it. hot regards enjoy mark ps I shook the jar when the mood overcome me. and replaced the wax paper often usually when my fiance' was sampling the limes.
