Hello Y'All - I have been lurking for a few weeks now, thoroughly enjoying the posts, and thought I would add my two cents regarding preserved limes and Moroccan preserved lemons - Firstly, preserved limes can be purchased in Persian groceries, and probably other Middle Eastern stores - they are dried whole and tossed into various koureshts - which is a Persian stew - So, if one had an abundance of limes, I suppose one could sun dry them as the Persians do, or in lieu of that, a dehydrator - or move here to Texas and just carry them around in your pocket - I don't believe that limes have a thick enough skin to withstand the process used in Moroccan preserved lemons - which are a sublime (you should pardon the pun) staple in any Moroccan kitchen, and for which there is no real substitute - The amount of salt, I think would destroy the more delicate lime rind - Debby
