I've recently preserved some jalapenos in some green ginger wine.  The
mix of the chilli taste and heat with ginger is fantastic.  It's great
for adding a zing to a beer just add a nip to your favourite brew and
the jals are great for using in salsa's.  I recommend Stone's Green
Ginger Wine I don't know if you can get it anywhere else but it's
available at any corner bottle shop in Australia or NZ.
