This is yet another of my 'what's on hand?' recipes. I was trimming my herbs yesterday and thought I should put them to use. Spaghetti with bacon, hab and tomato (serves 2 generously) 250 g spaghetti 1 400 g tin diced italian tomatoes (or 4 fresh tomatoes, if ripe and flavourful) 2 rashers bacon 2 cloves garlic, minced 3 sprigs each thyme, marjoram and oregano 3 habaneros 6 anchovies, roughly chopped (optional) chile powder olive oil salt, pepper. Bring a generous pot of water to boil with a small handful of salt. Finely chop chillies and herbs together. When water is boiling, add spaghetti, cook until al dente. Heat oil in a large skillet, fry bacon and garlic until cooked, grinding pepper over meanwhile, then add tomatoes. Cook until pasta is done. Drain pasta, add anchovies, herbs and hab to sauce, with chile powder to taste. Either serve pasta traditionally with sauce over, or toss pasta in sauce to take up flavours and save for husband's lunch tomorrow...which is what I did. Beats a sandwich!
