Marilyn: Tuna goes really well with a cajun-type rub. When I get fresh tuna I usually rub it with paprika, cumin, turmeric, garlic, salt, pepper and (of course) chile powder. I then fry or grill it, but I don't see why this wouldn't go well with smoking, too.
