(i think this is a pretty clean translation...the only stumbling block was "azucar moscada", which neither i nor my twenty-pound velazquez dictionary can phantom..."azucar" is definitely sugar, so i guessed at "powdered sugar", which i think is pretty close... Chilpotle Shrimp ================ (8 Servings) 2 Tablespoons olive oil 1 cup minced onion 4 minced cloves of garlic 2 teaspoons ground cumin 1 teaspoon oregano 1 cup water 1/4 cup apple cider vinegar 2 Tablespoons chopped canned chilpotle chile (2 tablespoons, ha! - bj) 1 kilo (2.2 pounds) jumbo shrimp, peeled and deveined 1/4 cup orange juice 2 Tablespoons powdered sugar Heat the oil and saute the onion until golden, about 10 minutes. Add the garlic, cumin and oregano; stir-fry one minute; place in blender with one cup of water, the vinegar and the chilpotle chile. Blend into a paste. Empty half of this mixture into a bowl and put in the refrigerator to cool. Put the shrimp into this bowl and mix to cover the shrimp with the paste; cover and return to the refrigerator for two hours. Put the remaining paste in a skillet and add the orange juice and sugar; bring to a boil. Lower the heat and cook the mixture for 10 minutes, until reduced to half a cup; let cool. Heat the broiler or grill. Remove the shrimp and dry them; with a brush cover them with the orange sauce and grill (broil) until opaque, about two minutes per side.
