Hi All, What Graeme Casselton was probably after was a Chilli Recipe, Either Beans or no Beans.. My Tuppence worth is the recipe below Xnipec Salsa Translation is "Mayan" "Dogs Nose" Serve with Fish or Poultry 1 onion Spanish (red) diced Juice of 4 limes and zest of 2 Juice of 1 mandarin 6 Habanero Chiles seeded,etc,. 1 Tomato finely chopped Kosher salt to taste Soak the diced Onion in lime juice and zest for 2 hours add the rest of the Ingredients, stir add Kosher salt to taste.. This recipe was made today in response to Graemes request and a sufeight of Mandarins.. I also made a Belizian stlye sauce substituting Mandarins for the Limes and added a mixed bag of Chiles, (mainly Cayenes "4", 2 scotch Bonnets 3 Mitimitas,1 red Savina and 2 Chocolate Habs that I didn't even know that I had growing,, (FWIW they were XXXX hot).... I also added a half a teaspoon of Tony Flynns Hab Powder(Its winter here in the southern climes and the Chiles are not at their firey best).. Luke in Oz The XXX Recipe could actually be made with 1 tablespoon of "Calvins", 1 tablespoon of Cambells and 1 tablespoon of Flynns powders.. No beans in true Tejas style..With corn on the side..
