Matthew Depends what you want to do with them. Green seem to pickle better, but red is sweeter and adds better coulur to many dishes. Hi Chile-heads, I am currently growing the variety Early Jalapeno indoors and have a few fruit on my plant. My question is: How can I tell if they are ready for picking - without picking them (I dont have that many to try). So - what is the best sign of ripeness?
