Mary-Anne Lemon Atjar Description The recipe is from a book from South Africa called "A Table at the Cape" by Helmine Myburgh. Ingredients * 1kg lemons or limes * 75ml coarse sea salt * 500ml white wine vinegar * 250ml oil * 2 to 10 chiles seeded and chopped to your taste * 10ml mustard seeds * 10ml cumin seeds * 10ml whole coriander * 50ml sugar Method 1. Scrub the lemons/limes with a nail brush and cut into quarters. Remove all the pips. 2. Place in a container and sprinkle with salt. 3. Pour over the vinegar. Cover and leave for 36 hours. 4. Pour off all the liquid that has accumulated. 5. Mix the atjar pickle combining the oil, chiles, spices and sugar and pour over the lemons. 6. Refrigerate. Great w/CousCous, tagines, curries, tikkas or grilled meats especially with chicken or fish.
