Brethern... yes, Monk Rael is of a simplistic nature, and today this fact, my nature was proved yet one more time... how? ask ye? well, lemme tell you... while i did not have much room for the fruit of El Grande this year (which is more than the last few, i must say, because that amount was NIL) i did have room for some 'mater plants along with my beloved fav-o-rite chile, serranos (which are just now fruiting, after 3 months, or rather, one plant is...the other two sit and flower, smiling at me daily...something weird going on here methinks as they are rather smallish, moreso than those i've grown in the past years...time will tell, eh?) and pimentos (never grown 'em, hence, an experiement...also just now fruiting)...these 'maters plants were romas which i do indeed love to cook with... romas are just groovy tomatoes... anywho, i took about 2 pounds and followed the recipe of Marcella Hazan, who happens to be my Italian cuisine instructor (she just doesn't know it), which is to blanche 'em, peel 'em, chop 'em, throw 'em in a pot with about 5 TBSP butter (whole, unsalted...none of that fake fat crap), half of an onion, and some salt...cook on a slow, low simmer for 45 minutes, and that's it, baby... 'cept this redneck added some ground chile, naturally... my tiny dungeon apt. smells like heaven, mon...smells like i should bring out the Twister board and invite some nubiles over for dinner on me (literally, of course...)...the sauce, not quite done yet (i'll end up cooking it about 1 1/2 hours), already has the flavor working...clean, pure tomato...wholesome luscious butter...not-too-bitter onion sneaking in the back door, and smackyouintheface chile hiding behind it all...baby, it's how a good sauce should be: simple, rich in flavor, color, smell, taste...and available for me to eat...sorta like the qualities i look for in nubiles, yes...mmmmmmmmm gonna (make myself-)go to my statistics class (AAARRRRGH), run by the store on the way home and grab a loaf of not-too-old crusty wanna-be French bread, race on home, strip down, sit on the floor, and eat pasta sauce with hot bread as my spoon... lawdy...it just don't get much better than this...
