This was adapted from Marcella Hazan's Marcella Cucina. It was delicious. I used one of the mystery chiles from the Bowers Festival haul and it was quite good. Even DH loved it. I obviously didn't get enough chiles at the festival. DH thought I was nuts for eating more of them. They are addictive! * Exported from MasterCook * Pasta with Goat Cheese, Chives & Chiles Recipe By : Adapted from Marcella Hazan Serving Size : 4 Preparation Time :0:00 Categories : Cheese Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 6 oz pkg goat cheese -- softened a bit 1/4 cup extra-virgin olive oil 2 tbsp fresh chives -- chopped 1 chile pepper -- chopped to taste salt -- to taste 1 lb dried pasta of your choice In a small bowl, combine the cheese, oil, chives, chile and salt and mix well with a fork until smooth and thoroughly combined. Cook the pasta and drain it, pouring some of the water into a serving bowl. Swirl the water around the bowl to warm it, pour out all but 1 tbsp of water. The water will help the sauce, which is rather dry to coat the pasta more uniformly. Immediately place the drained pasta in the bowl, add the goat cheese mixture and toss thoroughly to spread the sauce and coat the pasta strands well. Serve at once.
