Hi CHs, Now, this is more of a story than a recipe. Joanne, my very S.O., accepts and even supports my being a CH. * For some meals, she separates portions into "normal" and "CH". * The door of our frig is mostly filled with a conglomeration of hot sauces. * Recently, without any any specific knowledge of the various sauces, Joanne has taken to randomly selecting two of the bottles/jars, and putting random amounts in to the CH portion destined for me. => Needless to say, this makes for some interesting surprises. One evening last week we were going to have meatloaf, but ran out of time. Joanne mixed for meatloaf, but shaped them into big hamburger patties, and fried them in light sesame seed oil (my preference). When mine were ready, I selected a suitable hot source to put on my burgers -- I selected "Scorned Woman", which is a barbecue sauce that is a CH medium hot, and not too sweet for me. I had a bite and was more than a bit surprised -- I didn't remember Scorned Woman as being THAT HOT. I tasted the burger by itself, it was *considerably hotter* than Scorned Woman. Proceeding more cautiously, I devoured every delicious morsel, using more Scorned Woman for tartness and moderation. I of course complimented Joanne on her preparation, and inquired as to what she used: "the jar red stuff on the second shelf" and "something wild on the door". I investigated. They were: Sambal Oelak (Chile paste - Huy Fong Foods) and Smokin' Chipotle Sauce (Mild to Wild Pepper & Herb) We often don't measure. The basic loaf mix contained: ground beef, eggs, bread crumbs, milk, garlic powder, and black pepper. The best I can estimate: In ~ 2 lbs of burger-loaf mix were: ~ 4 oz (!) Sambal Oelak and ~ "three glugs" Chipotle Sauce. I do recommend the combination. If an organized cook can put this into a recipe, please email it back to me.
